Honey Baked Chicken

My Brother in Law served a portion of his mission in India and later introduced the wonderful world of curry to Cameron and I. This isn't an Indian dish, but it has curry in it. Its really simple and very good. I serve it with brown rice and a veggie!

  • 1/3 cup honey
  • 1/3 cup butter
  • 2 Tablespoons dijon mustard
  • 1 teaspoon curry powder
  • 1 dash of salt
  • 3 chicken breasts (chopped in bite size pieces)

Combine first 5 ingredients in saucepan until all melted and mixed. Cover chicken with sauce in a baking dish. Bake at 350 degrees for 45-60 minutes...turning chicken at least once. Serve over rice.

(if you have an Indian restaurant near you, order some garlic naan to serve with this, its delightful!)
